We increasingly use miso as a salt and seasoning base for soups, sauces and dressings. Lemon miso vinaigrette is delicious with rich fish like salmon as well as lighter fish like sea bass. We serve it with sea trout and new season asparagus or with squid and steamed spinach.
Miso is a staple of the Japanese diet, delicious and exceptionally good for you. This deep, rich flavoured, salty fermented soya bean paste is high in protein, helps lower cholesterol, strengthens the immune system and has anti carcinogenic properties.

A versatile Japanese style dressing used on our signature dish "sea bream sashimi with 'avruga' caviar, purple shiso cress and coriander." Fantastic on thinly sliced raw fish, sushi or tempura, as well as grilled fish and steamed vegetables.

Fresh truffle dressing made from black Umbrian truffles, verjus (a subtle, rounded, fruity alternative to vinegar), soya sauce and lime. We serve with lightly seared beef and new potatoes.
