red pepper curry
to complete this curry you will require 400mls of coconut milk
FOR fish, chicken and duck.
SERVE using a heavy based pan, combine red pepper curry, coconut milk and chicken thighs, simmer until well cooked and tender. Serve with rice, coriander and lime wedge. (serves six)
